Caramel Apple Pie

From Linda. Makes one 9” pie.

Prepare double crust for pie.  Roll out half of pie crust, place in pie shell.

Mix together in large bowl:

  • ¾ cup brown sugar
  • ¼ cup flour
  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • Dash salt

Add:

  • 4-5 cups peeled and thinly sliced cooking apples (Jonathan, pippin, etc), even better if you use several varieties!
  • 2 T lemon juice

Toss gently.

Place apples into prepared pie crust, put dabs of butter across top of apples. Roll out other half of crust, place over top of apples, and flute edge.  Bake at 350 degrees for 1 ¼ hours.

Place in small saucepan:

  • ½ cup butter
  • 1 cup brown sugar
  • 2 T heavy cream

Bring mixture to a boil and stir constantly for 2-4 minutes.

Mix in:

  • 2 tsp vanilla
  • 1 cup walnuts, coarsely chopped.

Pour topping over fully baked pie while still warm.
