Adapted from the More With Less cookbook by Linda. A great time-saver! Serves 5-6.
Saute in skillet:
- 1 cup chopped onion
- 1 clove garlic, minced
- 3 T olive oil
- 1 T curry powder
- 1 ½ tsp salt
- Dash each pepper, cinnamon, ginger, and turmeric
Add and cook until well browned:
- 1 lb ground beef
- 2 c chopped canned tomatoes
- 1 potatoes, diced
- 2 c frozen green beans or peas (if peas add at last minute)
Cover and simmer 25 minutes, serve over rice.
