Adapted from the More With Less cookbook by Linda. A great time-saver! Serves 5-6.

Saute in skillet:

  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 3 T olive oil
  • 1 T curry powder
  • 1 ½ tsp salt
  • Dash each pepper, cinnamon, ginger, and turmeric

Add and cook until well browned:

  • 1 lb ground beef

Stir in:

  • 2 c chopped canned tomatoes
  • 1 potatoes, diced
  • 2 c frozen green beans or peas (if peas add at last minute)

Cover and simmer 25 minutes, serve over rice.
