Cinnamon Oat Bran Muffins Dukan style

I make these then cool and put them in a ziploc bag in the freezer and eat one per day instead of melba toast while on the very low calorie days of hcg or if you are on dukan diet.  Don’t eat more than one or two or you will pay for it as the fiber is quite high in this and great for keeping you regular!

Ingredients

  • 1 1/2 c oat bran
  • 2 T cinnamon
  • 2 cups of egg whites or egg beaters (equiv of 8 eggs)
  • 1 1/4 c zero fat greek yogurt
  • 4 tsp baking powder
  • 1/2 c sweetener (I use 1/4 c stevia in the raw and 1/4 c truvia or erythritol)

Preparation

Put papers into muffin pans. Spray lightly with oil. Mix all the dry ingredients together. Add yogurt and eggs and whisk until smooth. Add sweetener (you can taste it to see how sweet you want it). Measure into each muffin cup about 2 1/2 T batter. Bake in preheated 350 degree over for 15 to 18 minutes. Makes 2 dozen.
