Coconut Flour Parmesan Pizza Crust
Just test ran this with the Abe and Melissa Lewis Family and what a hit! So I better get it down here before I forget. Melissa promised a pizza party follow-up, so maybe we’ll get you some pictures then.
This recipe was adapted from Liz at Eat the Cookie.
1 cup buttermilk, yogurt or kefir
1/2 tsp sea salt
2 cloves crushed garlic
3/4 cup coconut flour
1/2 tsp baking powder
1/3 cup shredded Parmesan cheese
Preheat oven to 375F, and have your toppings ready to go before you put in the crust.
In a large bowl, whisk the eggs together with the dairy, sea salt and garlic. Add the coconut flour and mix until very smooth with no lumps. This may take a few minutes, as the coconut flour absorbs the liquid. Blend in the Parmesan.
Grease a large cookie sheet or pizza pan with coconut oil. Pour out the batter and use a spatula or other kitchen utensil to spread the batter thin and even.
Bake at 375F for 15-20 minutes. Remove pan from oven, add sauce, cheese and other toppings as desired. Place back in the oven for about 15 minutes more, or until toppings are done (coconut flour burns easy, so keep an eye on it!). Turn off oven and leave until you’re ready to serve.
