Apple Sausage (Dorr family Christmas tradition)

1 pound pork sausage (bulk)

1 tart apple, peeled, cored and chopped into very small chunks

5 T brown sugar, packed

1 tsp cinnamon

¼ tsp cloves

Mix together well, form into patties (you can separate by waxed paper and put into Tupperware).  Best to do this several days in advance of cooking to help flavors meld.  Place into frying pan on low heat, after browning briefly, put lid on to cook through, then add water as needed to cook well. This takes longer than you think, about 15 min or more. Remove lid about 5 min before you want to eat them so that the juices thicken and become syrupy.  Delicious with egg casserole and buttermilk biscuits!
